Ingredients:
500g plain flour
2 tsp bicarbonate of soda
1 tsp salt
400ml of buttermilk (any milk and 2 tbsp of lemon juice)
For buttermilk, pour 400 ml in a bowl and squeeze lemon juice. Leave for 10-15 mins on the side. In the meantime, stir flour, bicarbonate of soda and salt together in a large mixing bowl. Preheat oven to 200ºC. Start pouring buttermilk into the dry ingredients while mixing. Kneed a little on a floured surface into either one big one or 4 small rolls. You need to get it the oven quick while the bicarb is still doing its stuff. Transfer to a tray with baking paper, sprinkle flour over the top and cut a cross on the top. Bake for 40-45 mins.

Notes: What I love about this bread is that has a little different colour and taste every single time, depends how much lemon juice you put in the buttermilk and how long you leave it on the side. You can also use wholewheat flour (300g plain and 200g wholewheat).
