Ingredients:
2 Aubergines
Olive oil
Fresh chilli
Bunch of Spring onions chopped
Passata or pure
Grated cheese
Breadcrumbs
Pepper
Smoked Mackerel
Cut the aubergines half (long side) and put them on a tray with aluminium foil. Splash some olive oil over and sprinkle finely cut fresh chilli. Preheat oven at 180ºC and put it in for about 15 mins. Take out and spread tomato passata over, sprinkle with spring onions, grated cheese, breadcrumbs and pepper. Put back in the oven and bake for another 20-30 mins until the aubergine is soft. Few minutes before it’s done, put in the mackerel as well to warm up.
