Ingredients:
100 g pecans
170 g pitted dates
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp dried ginger
optional: sprinkle of sea salt
Preheat oven at 180 C. Place pecans on a baking sheet and toast for 5-6 minutes, watching to ensure they don’t burn. Add dates to a food processor and process until broken up into bits. Add in pecans and spices and process until well combined (about 3 minutes). Roll into balls of desired size. Keep refrigerated.

Notes: When you process it for long, it can be feel a bit oily. I just squeezed it out. When you refrigerate it, it is not oily anymore. It is lovely if you roll the balls in granola (I used Maple Pecan Granola, see recipe in Breakfast section). Or you can just sprinkle it with cinnamon, ginger or nutmeg.
