Ingredients:
200g white whole wheat flour or regular whole wheat flour
1/2 tsp ground cinnamon (optional)
1 tsp baking soda
1/2 tsp salt
2 eggs
100g coconut oil or olive oil
100g honey or maple syrup
70g Greek yoghurt or 60g milk
1 tsp vanilla extract
2-3 medium bananas (more ripe ones are better, can be from frozen)
80g chocolate chips or chopped walnuts, raisins, … or you can leave it plain
In a medium bowl, mix flour, cinnamon, baking soda and salt. Set aside. In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in bananas (you can either blend them or mash them in a separate bowl or blend them in with everything else). Add flour mixture in and fold in chocolate chips or other add ins of choice. Preheat the oven at 200ºC and prepare your bread tin with baking paper. Pour in the batter and sprinkle with some more cinnamon, raw sugar, or banana slices (optional). Bake for 50-55 mins (I usually turn the oven temperature down to about 160ºC after 30 mins so it cooks inside as well. When you stick a skewer in and it doesn’t stick, that’s how you know it’s done. Cool for few minutes and enjoy!
