Mug cakes

Ingredients:
Banana & Coconut mug cake:
1 mashed banana
30g oats
1 egg
pinch of baking powder
1 tbsp desiccated coconut
1 tsp cocoa powder (optional)
pinch of cinnamon
2 tbsp plain yoghurt

Mix everything in a bowl. Put it a medium size mug and microwave for 1.5 mins. You want it to be nice and creamy, not too dry. Serve with another spoon or two of plain yoghurt and coconut (or extra fruit etc.)

Apple & Cinnamon Mug Cake:
1 grated apple
30g oats
1 egg
pinch of baking powder
1/2 tsp cinnamon
2 tbsp plain yoghurt
walnuts (optional)

Mix everything in a bowl. Put it a medium size mug and microwave for 1.5 mins. You want it to be nice and creamy, not too dry. Serve with another spoon or two of plain yoghurt and coconut (or extra fruit etc.)

Notes: The base is always, oats, egg, baking powder and plain yoghurt. You can add any fresh fruit, dry fruit, nuts you want.

  1. Hi, I love your article. I recently completed an article on storing food. I like to make my own meat for Fall!. We will be making a tasty pudding to go with it. The teenagers will be on holiday and I am sure they are going to love it.
