Mackerel & Beetroot Risotto

25-30 mins
? 2 portion

Ingredients:
splash of olive oil
1 onion
200g arborio risotto rice
1 beetroot (chopped into smaller pieces)
300 ml stock (I used vegetable stock but fish is fine too)
2 small fillets of smoked mackerel
2 sprigs of spring onions
parmesan
pepper

Chop onion and fry on olive oil on a medium heat until soft. Add risotto rice and fry for 1 more min. Add beetroot and fry for another 1 min. Start pouring stock in, splash at a time, stirring occasionally. When the rice is nearly done, add mackerel and spring onions (chopped into small pieces). Season with pepper and grated parmesan.

Price: £4.50 (based on Sainsbury’s in the UK prices)

  9. You really make it seem so easy with your presentation but I find this topic to be really something which I think I would never understand. It seems too complicated and very broad for me. I am looking forward for your next post, I will try to get the hang of it!
