Ingredients:
2 cans of chickpeas (reserve 6 tbsp of the the liquid)
4 tsp tahini (see Tahini recipe)
3 tbsp lemon juice
2 garlic cloves (crushed or finely chopped)
pinch of sea salt
6tbsp of olive oil
1/2 to 1 tsp hot paprika (optional)
coriander
Rinse the chickpeas in a cold water. Put chickpeas, tahini, lemon juice, garlic and salt in a food processor with the reserved chickpea water. Turn on the food processor and slowly add the oil in. Process until fully combined and smooth (I like when there’s few pieces of chickpeas to give it some texture). Stir in hot paprika (optional) and coriander.
Price: £1.80 (based on Sainsbury’s prices)
Notes: Serve with bread, fresh vegetable or anything you fancy. I would probably make half next time. It is a whole tab of humous.
