Gingerbread cake

30 mins for prep + soak for a night, 1 – 1 1/4 hour baking

Recipe from:

500g self-raising flour
500ml almond milk
10 tbsp melted coconut oil
4-5 tbsp honey or maple syrup
7g baking powder
pinch of cinnamon, all spice, 2 cloves (ground)
handful of walnuts or raising (optional)

5 tbsp melted coconut oil
5 tbsp honey or maple syrup
5 tbsp cocoa powder

Mix all the ingredients (not the topping) and pour in on a big tray with baking paper 175ºC. Bake for about 30 mins. Wait until cooled and mix all the topping ingredients. Spread over and put in the fridge to cool.
