Fried eggs with Spinach, Spring onions and Chickpeas

splash of olive oil
chickpeas (half a can)
pinch of cumin
pinch of pepper
pinch of paprika
2 spring onions
handful of spinach
1-2 eggs

Heat the olive oil, throw chickpeas in the pan and fry for 2 mins. Move it to one side of the pan and crack an egg or two onto the other side. Add spices and spring onions to the chickpeas and stir occasionally. Just before it’s all cooked, add spinach to wilt. Once the eggs is done, it’s ready to be served.

Notes: The amount of ingredients can be changed according to how hungry you are or it can be served with bread or other alternative.
PS: Let me tell you little secret. I fried it all in a dirty pan from last night where I fried bacon and I don’t even feel bad because it was yummy. 😉
