Ingredients:
1 tbsp olive oil
1 big chorizo sausage
1 big onion
3 cloves of garlic
1.5 mug of rice
3 mugs of water
1l of chicken or vegetable stock
1 tbsp paprika
1 tbsp hot paprika
1 tin of chopped tomatoes
3 handfuls of spinach
Cut your chorizo, onion and garlic. Fry chorizo first and after a minute add onion and after another 2 minutes, add garlic. When onion is soft, add rice and stir so it coats with the chorizo oil. Pour in the stock and cook until the rice is cooked. Few minutes before it’s done, add spices and chopped tomatoes. When you turn the heat off, stir in spinach and leave for a couple of minutes. Then it’s ready to be served.
