Chicken, Bacon & Kale Stir Fry

Ingredients:
olive oil
500g chicken
5 strips of bacon
1 small carrot
1 pack of bean sprouts
2 celery sticks
100g mange tout
100g kale
lime zest and juice
chilli seeds, pepper
rice noodles

Cut chicken and bacon into small pieces. Fry it on olive oil until cooked. In the meanwhile, grate carrot with a small peeler, chop celery into small pieces, cut the ends of mange tout. Transfer chicken and bacon onto a plate and throw all the vegetables apart from kale into the pan and fry until cooked. While you’re frying the vegetables, cook rice noodles for a minute according to a pack and steam the kale on the top (or you can fry it with the vegetables for a minute). Before serving, season the vegetables with lime zest and juice, chilli seeds and pepper.

Notes: My leftover version of stir fry. Bacon really makes it less boring, trust me! 🙂
