Ingredients:
olive oil
3 carrots
half of celery
2 onions
3 garlic cloves
handful of parsley
250g mince beef
2 tins of chopped tomatoes (or fresh tomatoes + passata)
3 bay leaves
pinch of thyme
half of whole cinnamon stick
salt, pepper
1 tsp lemon juice
handful of basil
parmesan
As a side: Pasta / toasted tortilla chips
Chop carrots, celery, onions and garlic into small pieces and fry on olive oil until soft. Add parsley and mince beef. Fry until mince beef nearly done. Put in the tomatoes, bay leaves, thyme, cinnamon, salt and pepper and slowly boil for about half an hour until all the flavours combine and everything is cooked perfectly. Add lemon juice, basil and parmesan at the end to serve.
Price: £5 (based on Sainsbury’s prices)
Notes: You can choose side to your preference. I just had it with the tortilla chips.
