Ingredients:
For burgers:
250g mince beef
1 small carrot (grated)
handful of herbs (I used parsley, basil and coriander but anything would be good)
1 tsp cumin
1 tsp turmeric
pepper
1/2 tsp chilli powder
1 egg
handful of breadcrumbs
Splash of olive oil
Mix all ingredients together and form into burger patties. Fry on a splash of olive oil in a frying pan. Meanwhile make salad.
For salad:
100g kale (I prefer to steam it or leave for few mins in a bowl with boiled water but can be fresh)
100g goat cheese
handful of walnuts
handful of cranberries
1 small apple (cut into smaller pieces
For dressing: 1tbsp olive oil, 1tbsp wholegrain mustard and 1 tbsp honey mixed well together.
Mix all ingredients together and top up with the dressing.
