Banana Oats Energy Balls

Ingredients:
110g cashew nuts
150g oats
2 medium ripe banana
50g ground almonds
3 tbsp dark chocolate chips
1/2 tsp vanilla essence
1/4 tsp cinnamon
1/4 tsp salt
1 tbsp chia seeds
6 tbsp unsweetened finely shredded coconut

Place the cashew nuts into a food processor and pulse until it turns to a grainy paste. Add oats and pulse again to break up the oats. Add the bananas and pulse again until fully combined. Put it in a big bowl and stir in the ground almonds, then add the chocolate chips, vanilla essence, cinnamon,salt and chia seeds. Stir again until combined. You should have a thick, sticky paste. Place the shredded coconut in a bowl and roll the balls in it. Store in the fridge.
