Rhubarb Earl Grey Tea Loaf

30 mins for prep + soak for a night, 1 – 1 1/4 hour baking

Ingredients:
300g sultanas
200g roasted rhubarb
300ml strong earl grey tea

Cut the rhubarb into small pieces and roast for 20mins at 180ºC. Put in a bowl with sultanas and pour 300ml strong earl grey tea. Leave to soak for a night or a whole day.

2-3 tbsp honey
275g self-raising flour
1 egg beaten

After it’s soaked, add honey, flour and egg. Preheat the oven at 150ºC. Put in a loaf tin with baking paper and bake for 1 – 1 1/4 hours.

Price: £2.10 (based on Sainsbury’s prices)
Notes: Such an easy recipe to make and the taste is so good.
